The Story Behind This Cheesecake
Cheesecake has always been very special to me. My love for it began during my first pregnancy, when I suddenly found myself craving cheesecake everywhere we went.
Every restaurant we visited, I ordered cheesecake for dessert. But time after time, something was missing—it either wasn’t sweet enough or lacked the flavor I was looking for.
That Christmas, my mom gave me a baking set along with my grandmother’s cookbook and encouraged me to start making my own desserts. I took that challenge to heart and began experimenting with recipes. After many attempts, I finally created the cheesecake I had been searching for.
This Key Lime Cheesecake recipe was developed more than 34 years ago and has been tested and perfected ever since. It’s become one of my most trusted desserts—rich, creamy, and full of flavor.
Key Lime Cheesecake Recipe
This cheesecake features a buttery graham cracker crust, a smooth citrus cheesecake filling, and a light frosting finish for an elegant presentation.

Ingredients
Filling
4 (8 oz) packages cream cheese (room temperature)
1 cup heavy whipping cream
4 eggs, room temperature
1 ½ cups sugar
3 tbsp flour
1 package lime gelatin (lime Jello)
1 cup lime juice
Crust
1 box cinnamon graham crackers
1 stick butter, melted
1 tsp vanilla extract
3 tbsp sugar
1 tsp cinnamon
Sprinkle of nutmeg
1 can Baker’s Joy baking spray
Frosting
1 stick butter
1 tsp vanilla extract
1 ½ cups confectioners’ sugar
3 tbsp heavy whipping cream
Instructions
Prepare the Crust
Preheat oven to 325°F (163°C).
Melt the butter in a microwave-safe bowl and set aside.
In a food processor, combine:
graham crackers
cinnamon
nutmeg
sugar
Blend until the mixture becomes fine crumbs.
Add the vanilla extract and slowly mix in the melted butter until the crumbs can easily be pressed together.
Spray a 9-inch springform pan with Baker’s Joy.
Pour the crumb mixture into the pan and press evenly across the bottom and slightly up the sides using the bottom of a small glass.
Bake the crust for 5–7 minutes. Watch closely, as graham cracker crust can burn easily.
Remove from oven and allow the crust to cool.
Prepare the Cheesecake Filling
In a large mixing bowl, add the cream cheese and mix until smooth.
Add:
sugar
flour
Mix for about 2 minutes until well combined.
Add the eggs one at a time, mixing between each addition. Crack eggs into a small bowl first to prevent shells from entering the batter.
Next add:
lime juice
lime gelatin
Finally, slowly pour in the heavy whipping cream and mix for about 1 minute until smooth.
Baking the Cheesecake
Pour the cheesecake batter into the cooled crust and let it sit for 3–5 minutes.
Wrap the bottom of the springform pan with aluminum foil, ensuring the foil covers the entire base and comes slightly up the sides.
Place the cheesecake pan into a larger shallow baking pan.
Heat about 3 cups of water in the microwave until hot.
Pour the hot water into the outer pan until it reaches about 1 inch up the sides of the cheesecake pan. This creates a water bath, which helps the cheesecake bake evenly and prevents cracking.
Place the pan in the center of the oven and bake for 55–65 minutes, or until the center is set.
Cooling the Cheesecake
Once removed from the oven, immediately take the cheesecake pan out of the water bath.
Allow it to cool at room temperature.
Remove the foil once it has cooled enough to handle.
Place plastic wrap gently over the top to prevent a skin from forming.
Refrigerate for at least 4 hours or overnight.
Before serving, remove from the refrigerator about 30 minutes early, then remove the springform ring.
Frosting
In a mixing bowl combine:
butter
vanilla extract
confectioners’ sugar
Mix until smooth.
Add the heavy whipping cream and beat until creamy and spreadable.
Transfer frosting to a piping bag and decorate the cheesecake as desired.
