My Shrimp and Rice Story


This particular version of shrimp and rice is inspired by one of my favorite meals that my mother used to make for our family. Growing up, dishes like this brought everyone together around the dinner table.


As life gets busier, I’ve come to appreciate one-pot meals even more. They are simple to prepare, require fewer dishes, and still deliver incredible flavor. Over the years, I’ve fallen in love with the balance of spices, vegetables, and shrimp that develop in this dish while it slowly cooks together.


It’s a comforting, flavorful meal that reminds me of home while also being quick enough to make on even the busiest evenings.


One-Pot Shrimp and Rice Recipe


This flavorful shrimp and rice dish is cooked entirely in one pan, allowing the ingredients and seasonings to blend together beautifully.



Main Ingredients

  • 2 cups rice, rinsed and drained

  • 4 cups water

  • 1½ pounds shrimp, peeled and deveined

  • 1 bag frozen peas

  • 1 onion, chopped

  • 1 green bell pepper, chopped

  • 1 orange bell pepper, chopped

  • 1 lemon


Seasonings

  • Salt, pepper, and garlic powder to taste

  • 2 tsp Sazon seasoning

  • 1 tsp turmeric

  • 1 tbsp Cajun seasoning


Cooking Ingredients

  • Olive oil

  • Butter


Instructions


  1. Prepare the Shrimp

    1. In a mixing bowl, add the peeled and deveined shrimp.

    2. Squeeze the juice of half a lemon over the shrimp and season with Cajun seasoning.

    3. Mix well and set aside to marinate.


  2. Prepare the Vegetables and Seasoned Water

    1. Chop the onion, green pepper, and orange pepper and place them in a bowl.

    2. In a measuring cup, combine:

      1. • 4 cups water

      2. • Sazon seasoning

      3. • Turmeric

    3. Stir well and set aside.


  3. Cook the Shrimp

    1. In a large skillet, heat olive oil and butter over medium heat.

    2. Add the shrimp and cook for about 3–4 minutes per side, just until lightly cooked. Do not cook them completely—they will finish cooking later in the rice.

    3. Remove the shrimp from the pan and set aside.


  4. Sauté the Vegetables

    1. In the same skillet, add a little more olive oil and butter.

    2. Add the chopped onions and peppers and sauté until soft, about 5 minutes.

    3. Season with salt, pepper, and garlic powder.

    4. Remove from the pan and set aside.


  5. Toast the Rice

    1. In the same skillet, add a bit more olive oil, butter, salt, pepper, and garlic powder.

    2. Add the rinsed rice and sauté it until it becomes lightly toasted and golden brown.


  6. Cook the Rice

    1. Add the seasoned water mixture along with the sautéed peppers and onions.

    2. Cover and cook on medium heat for about 15 minutes.

    3. Next, add the shrimp and frozen peas.

    4. Reduce heat to low and cook for an additional 10 minutes.

    5. Turn off the heat and allow the rice to rest covered for about 20 minutes before serving.
